Open office recent files
Do all the sites have the same problem? You can check if the files in other sites have the same problem. May I know if you have made any changes before the problem occurred?
You mentioned "5 different word files, but only 1 of them are showing ", does it mean that those files were not all shown in the recent list of Word application? If so, please open the files on the local to check if the same problem will occur.

May I know if the Recent list in the Office portal and the Recent list in Office applications are exactly the same after you open the file stored in SharePoint Online?
